"Mary's Magic Meal" -- Got this recipe from Mary. It's EZ, quick, and Family Friendly. Uses frozen chicken and canned ingredients so can be put together in a hurry! EZ for kids or "cooking-challenged" adults to do. Serves 6 plus.
4-5 FROZEN boneless/skinless chicken breasts (or boneless, skinless thighs) -- any fat removed
1 (15oz) can black beans
1 (15oz) corn (can sub garbanzo beans)
1 (15oz) medium chunky salsa (any brand -- can sub. mild or hot depending on family taste)
1 t. garlic powder (or to suit family taste)
Put 4-5 frozen chicken breasts in crockpot. Add 1 can black beans, drained, 1 can corn, drained, and 1 jar salsa.
Keep in crockpot on high for 4-5 hours until chicken is cooked. Drop in 1 pkg. cream cheese on top and let sit for 1/2 hour more. Stir melted cheese into liquid in pot, shredding (pulling apart) chicken as you stir.
Great served over brown rice OR corn chips. Eat 'plain' or garnish as desired -- with sour cream, jalapenos, chives, chopped tomatoes, black olives or combination of your favorites. Note: When I use garbanzo beans I drain them and stir them in at the time I'm adding the cream cheese to avoid overcooking. Leftovers will freeze well.
