I've been a part of a "frugal message board" for over a decade. Someone shared this easy chicken crockpot recipe there several years ago. It has drawn raves from everyone who has tried it -- and best of all, it's really simple, since it only takes about 3 minutes to put everything together.
By the way, it tastes yummier than it looks. :)
Ingredients:
4-6 frozen chicken breasts* -- no need to thaw
1 (15 1/2 ounce) can black beans, drained
1 (15 ounce) can corn, drained
1 (15 ounce) jar salsa, any kind (I prefer mild!)
1 (8 ounce) package cream cheese
Directions:
Place the frozen chicken in the bottom of crock pot. Add the can of black beans (drained), the corn (drained), and a jar of salsa.
Cook in crock pot on high for about 4-5 hours or until chicken is cooked. Add the package of cream cheese to the top of ingredients, and let it sit and melt for about 1/2 hour. Then stir, serve and enjoy!
*(If you used bone-in chicken breasts, you'll probably want to take the bones out before serving, especially for small children.)
This chicken and veggie dish is great over cooked rice or noodles. (If there are any leftovers, theyre fabulous with big "dipping chips.")
